Kadamba Sambar Recipe


Kadamba Sambar is a traditional South Indian mixed vegetable sambar made with a variety of vegetables, toor dal, and a flavorful freshly ground masala. It’s commonly served in weddings and festivals with hot rice or pongal.

Ingredients for Sambar


- 1/2 cup Toor Dal (pigeon peas)
- 1/4 tsp Turmeric
- 2 cups Mixed Vegetables (carrot, beans, brinjal, drumstick, raw banana, etc.)
- 1 small Lemon-sized Tamarind (soaked in warm water)
- Salt to taste
- 2 tsp Oil
- A few Curry Leaves
- Coriander Leaves for garnish

Ingredients for Masala


- 1 tsp Oil
- 2 tbsp Chana Dal
- 1 tbsp Coriander Seeds
- 4–5 Dry Red Chilies
- 1/4 cup grated Coconut (fresh)
- A pinch of Hing (Asafoetida)

Tempering


- 1 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 1 Dry Red Chili
- A few Curry Leaves
- 1 tsp Oil or Ghee

How to Make Kadamba Sambar


  1. Cook toor dal with turmeric until soft. Mash and set aside.
  2. Boil the mixed vegetables in water until tender. Add tamarind extract and salt, and let it simmer.
  3. Heat oil, roast chana dal, coriander seeds, red chilies, and coconut until golden. Add hing. Let it cool and grind to a smooth paste with little water.
  4. Add the ground masala paste to the simmering vegetables. Cook for 5 minutes.
  5. Add mashed dal and mix well. Simmer for another 5–7 minutes until everything blends well.
  6. Heat oil or ghee for tempering. Add mustard seeds, cumin, red chili, and curry leaves. Pour over the sambar.
  7. Garnish with fresh coriander leaves and serve hot with rice or pongal.
