Palkova is a traditional South Indian milk sweet made by slowly reducing milk with sugar until it reaches a rich, thick, and grainy consistency. It’s simple, delicious, and a favorite at festivals and temples.
Ingredients
• 1 litre Full Cream Milk
• 1/2 cup Sugar (adjust to taste)
• 1/4 tsp Cardamom Powder (optional)
• 1 tsp Ghee (for greasing or flavor)
Making Process
Pour the milk into a thick-bottomed pan or kadai and bring it to a boil.
Lower the flame and simmer the milk, stirring regularly to prevent burning.
Continue boiling and scraping the sides until the milk thickens and reduces to a grainy paste-like consistency.
Add sugar and mix well. The mixture will loosen slightly — keep stirring until it thickens again.
Sprinkle cardamom powder (optional) and a tiny bit of ghee.
Once it leaves the sides and becomes fudge-like, remove from heat. Cool slightly and serve warm or chilled.
