Payasam Recipe


Payasam, also known as Kheer, is a traditional South Indian dessert made from milk, rice or vermicelli, and sweetened with sugar or jaggery. It’s a creamy, comforting dish often served during festivals and special occasions.

Ingredients


• 1/2 cup Vermicelli or Rice
• 1 litre Full Cream Milk
• 1/2 cup Sugar or Jaggery (adjust to taste)
• 2 tbsp Ghee
• 2 tbsp Cashew Nuts
• 2 tbsp Raisins
• 1/4 tsp Cardamom Powder
• Few Saffron Strands (optional)

Making Process


  1. Heat ghee in a pan and roast cashew nuts and raisins until golden. Set aside.
  2. In the same pan, roast vermicelli until light golden (skip this if using rice).
  3. Add milk and cook on medium flame, stirring occasionally until the vermicelli/rice is soft and cooked.
  4. Add sugar or jaggery and stir well. Let it simmer until it thickens slightly.
  5. Add cardamom powder, saffron (if using), and the roasted nuts and raisins.
  6. Serve warm or chilled as desired.
